Mother's Day...the traditional Sunday breakfast in bed, with fresh juice, a white rose and a bundle of warm, cuddly hugs. This is her designated day and your chance to openly show her all the love you have for her.Below are a few things that fathers and kids can prepare for mum on Mothers Day.

This year our Mother is not with us so I am going to do something different. Our Mother usually has poached eggs with hollandaise sauce deepfried onion rings and bread sticks or toast fingers.(cant forget the bacon thats more for us then her) Washing it down with her favourite bubbly riccadonna asti, perked coffee and home made chocolate squares. Since our mother or our grandmother is not with us Becca gets the spot of honor and to show my princess the importance of Mothers Day in our family we will do what we normally do with our mother with breakfast in bed too.

For breakfast
We will serve our honorary mother

Brunch potato casserole.
Side plate of cripy bacon
Poached eggs
Apple scones
Glass or two of Mimosa

BRUNCH POTATO CASSEROLE.

This is a delicious and very versatile dish.
which can be used as a side dish to steak
This can be made the day before.
and baked the next day.
Allow 10 extra mins of cooking time.

INGREDIENTS
1 kg new potatoes,
(skinned, cut into 1-inch cubes)
200 gram processed cheese, (cubed)
200 ml mayonnaise (best foods is best)
1 onion, (finely chopped)
250 gram bacon, (chopped)

DIRECTIONS
Preheat oven to 350F 175C

Boil potatoes till they are just soft.

Drain, place in a large bowl.
While the potatoes are still hot,
gently stir in cheese
without mashing potatoes;
Continue to stir, every minute or so,
until cheese is melted.

In a separate bowl,
stir together mayonnaise, onion, and bacon.
Gently stir into potatoes and cheese.
Spread into a 13x9-inch baking dish.

Bake in a preheated oven for 50 minutes.

APPLE SCONES

"This has a terrific aroma and taste.
These scones are perfect for tea."

INGREDIENTS
2 cups all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, chilled
1 apple - (peeled, cored and shredded)
1/2 cup milk
2 tablespoons milk
2 tablespoons white sugar
1/2 teaspoon ground cinnamon

DIRECTIONS
Measure flour, sugar, baking powder, soda,
and salt into a large bowl.
Cut in butter or margarine until crumbly.
Add shredded apple and milk.
Stir to form a soft dough.

Turn dough out onto a lightly floured surface.
Knead gently 8 to 10 times.
Pat into two 6-inch circles.
Place on greased baking sheet.
Brush tops with milk,
and sprinkle with sugar and cinnamon.
Score each into 6 pie-shaped wedges.

Bake at 425 deg F (220 deg C) for 15 minutes,
or until browned and risen.
Serve warm with butter.

CRIPSY BACON AND POACHED EAGGS

For best results streaky bacon is best

MICROWAVE

In a microwave dish place 4 to 6 rashers of bacon
microwave on high for 3mins
then turn over and microwave another 3mins
or untill to desired crispiness

OVEN

Place a few rashers of bacon
in an oven dish and place in preheated oven 350F
untill desired crispiness.Turn once

OVEN TOP

In a frying pan place a few bacon rashers
fry to desired crispiness

POACHED EGGS

If you dont have an egg poacher
In a frying pan
put bout a quarter cup of water
bring to the boil
break two eggs into boilin water
reduce heat and gently simmer covered for 2mins
or to desired consistency

CAMPAGNE MIMOSA
The Champagne mimosa is a classic drink for fun breakfasts,
especially breakfast in bed.
Treat yourself or a loved one to this classic drink!

INGREDIENTS 1oz Orange Juice
3oz Champagne

*I tried this with pineapple juice and
found it more refreshing then orange juice
but then again I have weird tastebuds

DIRECTIONS In a tall flute glass,
pour first the Orange Juice,
then the Champagne.
The Champagne with its alcohol is thicker
and will mix down into the OJ.
Do not stir - you'll lose the bubbles!

In our home Mother's Day starts on the saturday night. Saturday night, My sisters and I start our pampering of our Mother. We run her a bath give her a manicure and a pedicure and the whole evening is spent laughing n giggling with each other and enjoying this special time with our Mother. I know it dont have to be a special occassion that you do this for your Mother but for us Mothers Day is bigger then a birthday. As the eldest child in the family its my duty to make sure everything is organised. From the flowers to what she has for breakfast in bed.
I have two sisters and one brother and you are thinking in all of this where is he? Well he is gettin a manicure n pedicure too with our mum. His task for Mothers Day is to be at her beck n call and to get a single white rose...
I remember once he forgot the white rose n had to run to every dairy early on Mothers Day to find one and he only had 5 dollars. As you can imagine the flowers on Mothers Day is hard to find and not cheap. This Mothers Day my baby brother ran a 5 mile radius and couldnt find one single white flower.
He was devasted as he walked back home he passed the RSA an old peoples homes. One of the old men at the home had a garden of roses and his prized possession were his white roses. He always has a dozen of the white roses in bloom bout mothers day n he remembered that soo he was encouraged went to the old mans door n knocked. My baby brother asked the old man if he would sell one of his prized white rose to him and he only had 5 dollars. The old grump told him to get lost and his prized rose was worth more then 5 dollars.
I cried when one of our neighbours who was witness to the exchange between my baby brother n this grumpy old man told us the story..How this little boy wouldnt give up n kept begging for a single white rose for his mummy. He asked the old man if he could work for him everyday after school till he payed him the price he thought his white rose was worth.. The old bugga wouldnt budge so the little boy walked back home. As he passed the old mans letterbox he saw the paper boy didnt take the old folks papers to their door soo he gathered all the papers up from the mail boxes n delivered them.
The grumpy old fool cant walk up the little incline to the mail box n would have missed out on his morning paper. (Thought crossed my mind I would have left the old goats in the mail box n delivered everyone elses)Accordin to our neighbour this little boy knocked on the old goats door again n the old man came and yelled at him for disturbing him. The little boy just smiled at him and said, "Sorry Sir, the paper boy forgot to bring your paper to your door" and handed him the paper. Turned round and ran off waving to all.
Fifteen minutes after my baby brother came back home discouraged n very upset there was a knock at our door I answered it and it was the old man with a dozen of his prized possession all wrapped up in cellophane with a single red rose amongst it. He said it was a delivery from above for the little boy that lived at this house. I gave him a big smile accepted the flowers and yelled at my baby brother that God had answered his prayers and an angel just delivered a dozen white roses for him. The look on my baby brothers face I will never forget. It was full of thanksgiving and he had the most beautiful smile I had ever seen. I was 15 years old he was 10 years old.
Remembering this also reminded me of the lesson I learnt from my little brother that Mothers Day soo long ago. An unselfish act a smile and trustin in God can bring you riches beyond your dreams. You see once Tui realised that begging this old grumpy man would never get him his rose for our Mum. He prayed and God made it possible for him to soften this old grumps heart just by taking his morning paper straight to his door. God provided the flower for our Mother to show her what she means to us.
